Instructions

  2. In another bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until well combined.
  4. Stir in the drained crushed pineapple and shredded coconut if using.
  5. In a serving dish, layer half of the crushed graham crackers, followed by half of the pineapple cream mixture. Repeat the layers.
  6. Chill in the refrigerator for at least 2 hours to set.
  7. Serve chilled, garnished with maraschino cherries if desired.
