- 1/2 cup self-raising flour
- 1/2 cup butter (softened)
- 1/2 cup icing sugar
- 1/2 cup desiccated coconut
- 3 Tbsp milk powder
- 2 Tbsp liquid milk
Instructions
- In a large bowl, beat the butter and icing sugar together until light and fluffy.
- Add desiccated coconut, self-raising flour, and milk powder. Mix to combine.
- Pour in liquid milk and mix until the dough reaches the right consistency.
- Scoop and roll dough into small balls, then roll in coconut.
- Place on a baking tray, using a fork to create a pattern on top.
- Bake in a preheated oven at 170°C (340°F) for about 18 minutes or until golden brown.
Notes
Store in an airtight container at room temperature for up to a week, or freeze for up to a month.
