Ingredients
1 box blue velvet cake mix
3 large eggs
1 cup buttermilk (or whole milk)
½ cup vegetable oil
1 tsp vanilla extract
Optional: 1 tbsp cocoa powder for depth
Cream cheese frosting or vanilla buttercream (for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
In a large mixing bowl, combine blue velvet cake mix, eggs, buttermilk, vegetable oil, and vanilla extract.
Beat on medium speed for 2–3 minutes until the batter is smooth and thick.
Divide the batter evenly between the prepared pans.
Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Frost with cream cheese frosting or vanilla buttercream and decorate as desired.
Notes
Substitute buttermilk with a mix of 1 cup milk + 1 tbsp vinegar or lemon juice (let sit for 5 mins).
For cupcakes: Line a muffin tin and bake at 350°F for 18–20 minutes.
For extra moisture, fold in ¼ cup of sour cream or yogurt into the batter.
Add edible glitter or sprinkles for a festive look!
